Copycat Recipe For Auntie Anne's Pretzels & A Garlic Cheese Sauce For Dippin!



Auntie Anne's Pretzels: Copycat Recipe

Makes 12 Adapted from Food Network



2 cups milk
1 1/2 tablespoons (2 packets) active dry yeast
6 tablespoons brown sugar
4 tablespoons butter, melted
4 1/2 cups flour
2 teaspoons fine salt


1/3 cup baking soda
3 cups warm water
Coarse salt
 8 tablespoons butter, melted in a shallow dish 




Warm up the milk in the microwave or on the stove for just about one and a half minutes. It should be about 110º. If it's too hot it will kill the yeast. You should be able to comfortably keep your finger in it. Stir in the yeast and let it sit for about 3 minutes. Add the butter and sugar. Add the flour about 1 cup at a time and the add the fine salt. 

Kneed for about 10 minutes with a stand mixer, or by hand. Put it in a greased bowl and cover with greased cling wrap. Let rise for 1 hour in a moist, warm place until doubled in size. 

Preheat the oven to 450º. Punch down dough and divide into 12 lumps (I like to divide it in half, then divide each half into three, and then divide each remaining one in half again). Roll them all out as thin as you can. Combine the warm water and baking soda in a wide bowl. Form the dough into pretzel shapes, then dip in the baking soda water. Place on a greased baking sheet and sprinkle with coarse salt. Bake for about 7-11 minutes or until browned. Dip each in the melted butter while hot. 

Serve with cheese sauce.

Mini Oreo Cheesecakes {To Die For!}

OMG!!! Does not even begin to express my feelings over the recipes that I discovered over at Semi homemade Mom. Be sure to check out all the scrumptious, delectable items she has so graciously shared. 

I can imagine that my dieting plan, just took a left turn to "nope, not happen this year-ville"! Be sure to check out a few of my favorite posts like 30 Healthy Crockpot Dinners. Oh, who am I kidding all her recipes AND recipes submitted by her faithful followers are downright amazing!



Mini Oreo Cheesecakes


12 oz (1 1/2 bricks) cream cheese, softened
1/2 cup sugar
1/2 tsp vanilla
2 eggs
12 whole Oreo cookies
6 crushed Oreo cookies
whipped cream
chocolate syrup


Line 12 muffin cups with paper liners. Place a whole Oreo cookie in the bottom of each cup. Beat cream cheese, sugar, and vanilla in a bowl until creamy. Beat in eggs one at a time. Gently fold in crushed Oreos (I put them in a ziploc and rolled a can over them). Scoop cheesecake filling over each over cookie. Bake at 350 for 15 - 20 minutes or until center is set.

Let cool completely on counter and then refrigerate before serving. Top with some whipped cream and chocolate syrup.

Like It Spicy? Try This Pizza Recipe "Dragon Fire Pizza"


Makes: 1 (12-inch) pizza 
Prep Time: 15 minutes 
Bake Time: 12 to 15 minutes 


Anyone that loves spicy hot peppers will love this pizza.


Crust: 
1-3/4 to 2-1/4 cups all-purpose flour 
1 envelope Fleischmann's Pizza Crust Yeast OR RapidRise Yeast
1-1/2 teaspoons sugar 
3/4 teaspoon salt 
1 teaspoon Spice Islands Crushed Red Pepper 
2/3 cup very warm water (120° to 130°F)* 
3 tablespoons Mazola Vegetable Plus! Oil

Toppings: 
1/4 cup pizza sauce 
1/4 cup hot sauce 
8 ounces chorizo OR spicy Italian sausage, cooked and crumbled 
1/2 cup chopped onion 
12 to 15 canned jalapeno slices 
2 cups (8 ounces) shredded pepper Jack cheese

Directions

Preheat oven to 425°F.

Combine 1 cup flour, undissolved yeast, sugar, salt and crushed red peppers in a large bowl. Add very warm water and oil; mix until well blended, about 1 minute. Gradually add enough remaining flour to make a soft dough. Dough should form a ball and will be slightly sticky. Knead** on a floured surface, adding additional flour if necessary, until smooth and elastic, about 4 minutes. (If using RapidRise Yeast, let dough rest at this point for 10 minutes.)

Pat dough with floured hands to fill greased pizza pan or baking sheet. OR roll dough on a floured counter to 12-inch circle; place in greased pizza pan or baking sheet. Form a rim by pinching the edge of the dough.

Combine pizza sauce and hot sauce; spread over crust. Top with sausage, onions and jalapenos. Sprinkle with cheese.

Bake on lowest oven rack for 12 to 15 minutes, until cheese is bubbly and crust is browned.




*If you don't have a thermometer, water should feel very warm to the touch.

**To knead the dough, add just enough flour to the dough and your hands to keep the dough from sticking. Flatten dough and fold it toward you. Using the heels of your hands, push the dough away with a rolling motion. Rotate dough a quarter turn and repeat the "fold, push and turn" steps. Keep kneading dough until it is smooth and elastic. Use a little more flour if dough becomes too sticky, always working the flour into the ball of dough.

Recipe Note: Use crust to make one thick crust 9-inch pizza. Increase baking time to 20 minutes.
